Healthy Peanut Butter Muffins: Recipe

Healthy peanut butter muffins to the rescue: When you have had one of those days.. you know when nothing seems to go right for you.. Well it’s ok to say Funk you world.. Close the door, put the kettle on and clear a stack of these.

funky nut companyThere are times in your life when you want a nice cup of tea and something tasty to dip into it. Nothing new or funky here I know. But look what our Instagram mate @rahimagoga has made for us. We love the use of our Honey & Seasalt Peanut Butter in this.  







What you need

Big Dollop of Funky Nut Co Honey & Sea Salt peanut butter (Buy yours here)

2 + 1/2 cup oats
2 cups almond milk (See our east recipe for this here)
2 scoops protein powder ( I used stawberry flavour)
2 whole eggs
1 banana
1 tsp cinnamon, baking powder, vanilla extract
1 tbsp honey in texture (+ drizzle about 1 tbsp on baked muffins – optional)
1 + 1/2 tbsp melted coconut oil
pinch of salt

Add 1/8 tsp allspice
1/4 cup frozen blueberries (or fruit of your choice)

What to Do.

1- Preheat oven over 375 F.
2- Mix all dry ingredients in a large bowl. Mash banana in a small bowl and mix with all wet ingredients.
3- Pour wet mixture over dry mix, gently combine mixing.
4- Pour melted coconut oil into mixture and combine mixing.
5- Add fruit of your choice gently into the mixture.
6- Pour the mixture evenly into 14-17 muffin cups. *Bake about 35-45minutes. *Makes 14-17muffins. **ADD 1 tsp Funky Nut Honey Sea Salt Peanut butter 😍 and fresh strawberries and blueberries on top.

Approximate macros per muffin (without fruit): 132 calories, 6 g protein, 18 g carbs, 4 g fat.
