Another way to eat peanut butter, Oh yes. These bars are a low carb treat and are sugar and grain free. These things taste like our peanut butter cups. How tasty is that?

Ingredients

Peanut Butter Bars:

  • 95g cup butter melted
  • 95g cup peanut butter melted
  • 64g cup powdered Stevia Sweetener (or your fave sweeter)
  • 1 tsp vanilla extract
  • 254g cups Funky Nut Peanut Flour the roasted, defatted variety
  • 1/4 tsp salt

Chocolate Glaze:

  • 3 ounces sugar-free dark chocolate chopped
  • 2 tbsp butter

Instructions

Peanut Butter Bars:

  • Line a 8x8 baking tray with greaseproof paper.
  • In a large bowl, mix melted butter, melted peanut butter, sweetener, vanilla, and salt. Stir in peanut flour until dough comes together (it will be like a dough, not like a batter).
  • Press the dough firmly and evenly into the baking pan. To get it even, cover it with more wax paper and use a flat-bottomed glass to press down).

Chocolate Glaze:

  • Add the chocolate to a microwave proof bowl and heat gently until soft.
  • Pour over bars and spread to the edges. Refrigerate 1 hour until set. (Dipping your fingers in by accident is allowed).

Make a cuppa and dig in.
